Here’s a quick and easy recipie for homemade pancakes that your family will be sure to love.  No more buying pancake mix at the grocery store.

2 Cups Flour
2 Tablespoons Sugar
4 Teaspoons Baking Powder
1/4 Teaspoon Salt
2 Eggs
Milk

In a medium size bowl, mix all ingredients.  Add milk until it’s the desired consistency.  I like a thicker pancake batter so my pancakes are nice and fluffy.  Leftover batter can be stored in the fridge for future use, or you can make up all the batter and freeze the pancakes your family doesn’t eat.

A co-worker of mine brought in some DELICIOUS muffins the other day and was generous enough to share the recipe with me, so I thought I’d share it with you……

Chocolate Chip Muffins

Ingredients:

1 Box of Yellow Cake Mix
1 Cup of instant Chocolate Pudding Mix
1 Cup of warm water
3/4 Cup of oil
2 Eggs
1 Bag of your favorite Chocolate Chips

Directions:
*Note, DO NOT mix up the cake mix as directed on the box, you just need the dry mix for this recipe.*

Put everything (except the chocolate chips) in a bowl and mix together.  Once it’s mixed, add 1/2 of the bag of chocolate chips. (Or more if you wish 🙂 )

Put liners in your muffin pans and fill each liner 1/2-3/4 full.
Bake them in the oven at 350 degrees (Fahrenheit) for 25-30 minutes.

They are FANTASTIC!  ENJOY!!!
